Who We Are
This bakery started in a rented kitchen with one oven and a conviction that most bread is baked too fast. What began as weekend loaves for neighbors has become a quiet daily practice — one that still measures success in crumb structure and crust color rather than volume. We are, by design, small: a handful of hands, a short list of what we make well, and no particular interest in becoming anything else.
“The sourdough here has ruined every other loaf in the city for me. There's a bitterness to the crust that somehow makes the inside taste sweeter.”Local regular
“I've watched them pull the same loaf apart to check the crumb before it goes out. That's not a bakery performing care — that's just how they work.”Neighborhood customer
“Small menu, no wasted words on it, and every single thing on it is exactly what it says it is.”Weekend visitor
